I couldn’t resist these lemon cucumbers at the market — they’re named as such not because they taste like lemons, but due to their obvious physical similarity. 
Here’s a super simple idea for a cold summer salad. Other crunchy raw veggies or chopped peanuts would also be a nice addition.
