Green Beans 101

Green beans, string beans, wax beans, haricot verts…they’re all showing up in abundance this time of year. And buying straight from farms is the only way you’ll see all the fun, crazy, colorful varieties. 

Nutrition: Green beans are incredibly good for you, and are packed with carotenoids and flavonoids, plus vitamins C, K, and A. 

Preparation: Green beans aren’t just for Salad Nicoise or Thanksgiving casseroles. They’re amazing simply steamed, sauteed, raw, or even battered and fried!
