
The second most popular request was muffins. Instead of just making regular old muffins I was sipping on a cup of chai tea and got inspired. Sweet potato has such a mild flavor that it’s really providing the moisture and texture to the muffins, while all the yummy spices give them a kick.
To puree the sweet potato, I just cooked it in the microwave, scraped the flesh into a food processor and gave it a good whirl. You want the texture smooth. If you don’t have a food processor, you could always sub store-bought pumpkin, or even banana!
